Gluten Free Stuffing

Ingredients:

  • 2 cups chopped gluten free rolls
  • 2 cups chopped gluten free corn bread
  • 1/2 cup chopped green onion
  • 1/4 cup finely chopped white onion
  • 1/2 cup finely diced celery
  • 3 tablespoons butter
  • 2 tsp bacon jam (optional)
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 1/4 cup chicken broth
  • 1/4 cup finely chopped apple (optional can add 1/2 cup of cranberries)
  • 1/4 tsp sage
  • 1/4-1/2 tsp of Victoria Gourmet Herbs De Provence or Turkey Rub

Instructions:

Preheat oven to 350*

  1. Crumble/chop up the corn bread and rolls on a greased oven pan and toast the large bread "crumbs" in the oven for about 15 mins.  Remove and raise oven temp to 375*.  Put bread crumbs in oven pan 
  2. Saute the apples, celery & onions in the butter and cranberries & bacon jam if using.  Add all the spices, salt & pepper, sauté for another couple of mins and then add chicken broth.  Cook on low for 5 mins.
  3. Pour mixture over bread "crumbs" in the pan and bake at 375* for about 20-25 minutes until top is golden brown.  This recipe can easily be doubled.
