Gluten Free Stuffing
Ingredients:
- 2 cups chopped gluten free rolls
- 2 cups chopped gluten free corn bread
- 1/2 cup chopped green onion
- 1/4 cup finely chopped white onion
- 1/2 cup finely diced celery
- 3 tablespoons butter
- 2 tsp bacon jam (optional)
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1 1/4 cup chicken broth
- 1/4 cup finely chopped apple (optional can add 1/2 cup of cranberries)
- 1/4 tsp sage
- 1/4-1/2 tsp of Victoria Gourmet Herbs De Provence or Turkey Rub
Instructions:
Preheat oven to 350*
- Crumble/chop up the corn bread and rolls on a greased oven pan and toast the large bread "crumbs" in the oven for about 15 mins. Remove and raise oven temp to 375*. Put bread crumbs in oven pan
- Saute the apples, celery & onions in the butter and cranberries & bacon jam if using. Add all the spices, salt & pepper, sauté for another couple of mins and then add chicken broth. Cook on low for 5 mins.
- Pour mixture over bread "crumbs" in the pan and bake at 375* for about 20-25 minutes until top is golden brown. This recipe can easily be doubled.
