Remove the membrane off the backside of the ribs.
Slather ribs with mustard.
If you have a smoker: throw them on the smoker at 230* for 3 hours. Pull them off, wrap in aluminum foil and cook for 2 more hours. Take off foil and cook for another hour. Cover them up with any of your favorite Rufus Teague BBQ Sauce.
If you don't have a smoker: cook in oven at 300* covered for 3 hours; uncovered for an hour or until very tender. You can also cook in oven for 3 hours and then put on low grill for another hour or 2. Finish with Rufus Teague BBQ Sauce of your choice.
