- 4 slices bacon, thinly sliced crosswise or you can Skillet Bacon Jam (1-2 TBL)
- 1 medium onion, diced medium
- salt and pepper
- 1 tsp. flour
- 2-10 oz. packages of frozen spinach, thawed and squeezed dried
- 1 cup whole milk
- ½ cup sour cream
- 1-8oz bar cream cheese
- ½ cup Parmesan
- ½ bottle of Rippin’ Red Wing Sauce Mild or Rippin Red Wing Sauce Hot.
Preheat oven 350*. In a medium saucepan, cook bacon until browned & crisp. Drain bacon on paper towel and discard all but 1 TBL of bacon fat (If using Bacon Jam, use 1 TBL butter for next step); Add onion to pan, season with salt & pepper and cook until tender (about 8 mins). Add flour and cook 30 seconds; add spinach, milk, sour cream, cream cheese, Bacon jam (if using), and Wing Sauce. Cook, stirring until cream cheese melts, add1/4 cup Parmesan cheese. Transfer to a 1.5 quart baking dish, top with Parmesan cheese. Bake until bubbling, about 14 mins. Heat broiler and broil until top browns, about 3 mins. Let sit 5 mins. Serve warm dip with chips of choice.
